      Dry ageing of meat is a process where meat is hanged for a period of 21-40 days in a temperature controlled chambers.During that process the tissues in the meat are breaking by the enzymes and the meat loses 20-30 % of its water.This results in a meat that is much more tender and with more concentrated taste duo to smaller percent of liquids.
      All our meat is hand picked and dry aged according to traditional methods by Mesara Jokić.
